The School of Cooking, located in our stores in Ann Arbor, Holland, Petoskey and Traverse City, teaches everything from the basics to the most advanced cooking skills, appropriately targeted to anyone interested in making the most out of cooking with oils and vinegars. With regularly scheduled classes from 30 minutes to two hours in a variety of subjects, you may want to come again and again.

Interactive, small-group teaching ensures you'll get the most out of your time and because our classes are about doing as much as watching, your taste buds will be rewarded too. Learn to mix and match for fantastic flavor pairings according to your own preferences. Practice some classic and also creative applications for vegetables, salads, soups and meats. Every level of cook can master dressings, emulsifications, marinades, sauces, sautes, reductions, caramelizing and deglazing or maybe even just learn the differences.

As the seasons change, new class offerings will follow fresh ingredients and new reasons to cook and entertain. The Fustini's School of Cooking is designed to be dynamic and evolving, so there will always be something different to check out. And for groups of eight or more, be sure to ask about how to customize classes for special interests or private sessions.

Available Class Types:

Techniques Classes
Our Techniques Classes are designed to teach one particular aspect of using Fustini’s oils and vinegars, such as salad dressings, desserts, marinades, reductions, grilling, sauces, etc. This class will help you realize your own preferences and how those preferences interact with oil and vinegar.

Demonstration Classes
Our Demonstration Classes are a fast pace multitasking of two to six recipes over a 1 or 2-hour class period. The instructor will cook the recipes and provide direction. Students will enjoy a sampling of each finished piece. You’ll have an opportunity to interact with the chef throughout the class and watch the skills and techniques used in commercial kitchens.

Interactive Classes
Our Interactive Classes put you into the kitchen with the chef making four to six recipes over the 2 to 2 1/2-hour class. Put on an apron and cook right along with the chef. Then enjoy the fruits of your labor and even have plenty to take home!

From his early days in kitchens to many years at the highest levels of management, he's found the best mix of everything at Fustini's. When he's not busy running all aspects of planning and managing our kitchens, you'll find him doing what he loves most--being creative with food and working with and teaching others.
