<p><span style="font-weight: 400;">Early in the year, we kicked off an ongoing campaign we call “Fustini’s Cares.” In this initiative, Fustini’s donates 1% of every sale to Community Action House, Manna Food Project, Food Gatherers, or Food Rescue. <h3><span style="font-weight: 400;">New Product Labels </span></h3>
<p><span style="font-weight: 400;">This year, our bottles also experienced a refresh in look and feel. Bottles now feature thorough nutritional information, while still keeping those favorite label photos and those resourceful QR codes. We hope you’re as excited as we are to feature those beautiful bottles on your kitchen counter. </span></p>
<h3><span style="font-weight: 400;">Earth Day Bags </span></h3>
<p><span style="font-weight: 400;">On Earth Day this spring, we kicked off an exciting opportunity to get an extra bottle credit on your rewards account when you bring in your Fustini’s reusable bag! Such a fun way to reduce the number of bags used–as well as earn some credit for you, too! </span></p>

<p><span style="font-weight: 400;">This year, we celebrated these important food holidays in a big way! For National Olive Oil Day in September, we gave away free Fustis in a raffle. And both on National Olive Oil Day and National Vinegar Day, we gave away a free 60mL sampler bottle of our treasured Michigan-inspired balsamics with every purchase. What a delicious celebration! </span></p>
<h3><span style="font-weight: 400;">Staff Market Day & Haff-Time Cooking </span></h3>
<p><span style="font-weight: 400;">At Fustini’s, we know that our employees make sharing healthy and flavorful food with you possible. We are so grateful for our team! </span></p>
<p><span style="font-weight: 400;">We hosted Staff Market Day where our staff was given the opportunity to shop at their local farmers market and whip up some Fustini’s recipes with the produce purchased. It was a great time of shopping–and eating!--local, and inspired new recipes and flavor combinations to share with our community. </span></p>
<p><span style="font-weight: 400;">We also continued “HAFF-Time” cooking classes, which stands for “Healthy And Flavorful Foods Time”. This is a quarterly gathering of all our team members for a virtual cooking class to learn new recipes, techniques, and enjoy some delicious food. </span></p>

<h3><span style="font-weight: 400;">Trip to Spain and Italy</span></h3>
<p><span style="font-weight: 400;">This fall, leaders in our organization traveled to Spain and Italy to learn, explore, and especially experience the local mills where we get olive oil from. We also hosted a Welcome Home party to celebrate our new oils. Be on the lookout in early 2024 when we’ll have the SELECT olive oil that we picked out while in Spain! </span></p>

Because of this, we continually seek opportunities to best support our customers, wherever they may be. </span></p>
<p><span style="font-weight: 400;">QR codes have been around for quite some time. Yet due to the COVID pandemic, restaurants increasingly began to replace their laminated paper menus with a QR code posted on the dining table. With just a scan on your mobile device, patrons could see all the options they could order from on the menu. </span></p>
<p><span style="font-weight: 400;">That got an employee in the </span><a href="https://www.fustinis.com/petoskey/"><span style="font-weight: 400;">Fustini’s Petoskey location</span></a><span style="font-weight: 400;"> thinking, “what if Fustini’s could incorporate QR codes, too?” The idea began with putting QR codes on the Fusti containers that house the oils and balsamics in the store. The thought was that when people came into the store to purchase, they could scan the QR code and get instant access to recipes. Yet with the growth of online shopping, having QR codes right on the bottle labels brought that access to recipes quicker and easier from right in the kitchen. </span></p>
<p><span style="font-weight: 400;">Soon, bottle labels were designed with a unique QR code that, when scanned, brought the user to a webpage that housed a plethora of </span><a href="https://www.fustinis.com/recipes-nav/recipes/"><span style="font-weight: 400;">recipes</span></a><span style="font-weight: 400;"> that incorporate that particular extra virgin olive oil or vinegar. </span></p>

<h3><span style="font-weight: 400;">January - Northern Hemisphere Oils are IN!</span></h3>
<p><span style="font-weight: 400;">Right off the bat in January, we brought in our new Northern Hemisphere SELECT olive oil. Arbequina olive oil came to us from the country of Spain and had a slight fruity note. The Ayvalik olive oil brought us a complex flavor from Turkey. While these SELECT oils from the Northern Hemisphere didn’t last long at the beginning of the year, they sure brought some great flavor to kitchens all around. </span></p>

<h3><span style="font-weight: 400;">April - New and Bright Vinegar Flavors </span></h3>
<p><span style="font-weight: 400;">As the season turned to spring, we amp up the brightness with two new vinegar flavors! First, our </span><a href="https://www.fustinis.com/order/citrus-oregano-white-balsamic_2236/"><span style="font-weight: 400;">Citrus Oregano balsamic vinegar</span></a><span style="font-weight: 400;"> brought on a fruity and herbaceous balance that adds to all kinds of dishes, especially Greek, Spanish or Italian-inspired foods. Then, our </span><a href="https://www.fustinis.com/order/jalapeno-lime-white-balsamic_2231/"><span style="font-weight: 400;">Jalapeño Lime balsamic vinegar</span></a><span style="font-weight: 400;"> began spicing up your dishes with a sweet yet zesty bite. These flavors not only brought more options for your cooking but also new recipes ideas to mix up your weeknight dinners and salad dressings. </span></p>

<p><span style="font-weight: 400;">As Father’s Day rolled around, Fustini’s joyously teamed up with New Holland Brewing Co. This local brewery and distillery in Holland and Grand Rapids, Michigan has a large, nationally-recognized brand that is loved by many. This year, we teamed up to create a rich </span><a href="https://www.fustinis.com/recipes-nav/recipes/new-holland-marinated-pork-tenderloin"><span style="font-weight: 400;">marinade</span></a><span style="font-weight: 400;"> using Fustini’s SELECT olive oil and Michigan Apple balsamic along with New Holland Dragon’s Milk beer. Created by Chef Matt Kearby at NHBC, this pork marinade recipe became widely popular. </span></p>
<h3><span style="font-weight: 400;">July - The Return of In-Store Sampling</span></h3>
<p><span style="font-weight: 400;">At Fustini’s one of our favorite parts of what we do is inviting guests into an experience of tasting and sampling our oils and vinegars. While last year we had some restrictions in sampling in-store, in July, we brought it back. With tasting cups and new health and safety measures in place, we reintroduced sampling in our tasting rooms. </span></p>

<h3><span style="font-weight: 400;">August - Southern Hemisphere Oils Arrive! </span></h3>
<p><span style="font-weight: 400;">With a dedication to providing our customers with the highest quality oil, we were so excited to share the SELECT first harvest Southern Hemisphere olive oils. We added Arbequina, Koroneiki and later Coratina. These speciality oils are quite rare and are the first oils produced in the region, from bright green fruit. </span></p>
<h3><span style="font-weight: 400;">September - Celebrating National Extra Virgin Olive Oil Day </span></h3>
<p><span style="font-weight: 400;">Here at Fustini’s we’re passionate about olive oil. So on September 30, we celebrated National Extra Virgin Olive Oil day in a big way. With every purchase made on that day, in-store or online, we also shared a free sample bottle of non-flavored olive oil. With each single varietal sample bottle, it was exciting to share the versatility and ease of use that olive oil brings to cooking. Whether customers chose a flavored olive oil or a single varietal, we had the opportunity to share the joy of EVOO. </span></p>
<p><span style="font-weight: 400;">In addition to National Extra Virgin Olive Oil day, we also celebrated National Balsamic Vinegar Day in November. On this day, we also provided customers with a free bottle with any purchase on that day. </span></p>
<h2><span style="font-weight: 400;">A Look Ahead to 2022 </span></h2>
<p><span style="font-weight: 400;">We sure have seen some exciting things in 2021. Yet for many things, the fun is just beginning. Yet moving into the year 2020 is a great opportunity to look back on great memories and reminisce on experiences that come to mind in highlighting the year.</p>
<p>Maybe for you the year of 2019 was a year of change. Maybe it included new opportunities or settling into a routine. Maybe it was filled with amazing moments or had numerous rough patches that you navigated through.</p>
<p>As you reflect on your year of 2019, we want to do the same. The year of 2019 was a fun and exciting one in the world of Fustini’s, as is every year. Here, we share just ten of our top highlights of the year.</p>
<h5>1. Spain</h5>
<p>At the top of our list is an incredible trip to Spain with some of our Fustini’s team members. This international adventure included some truly amazing experiences in learning more about olive oil and the importance of freshness. During the trip, the team witnessed the olive oil pressing process that takes freshly harvested olives and turns them into flavorful and smooth oil. They visited historical sites and museums that are dedicated to sharing the story and value of the olive oil process that is so influential in Spanish culture.</p>
<p>The team also chose Fustini’s new “Select” oil after numerous tastings to ensure the product they share with their community is the freshest and most satisfying flavor.</p>

<p>With a commitment to the community in which we live and work, we were so excited to continue our trend of “going local” with Michigan-made honey products. In 2019, we partnered up with Great Lakes Bee Company to offer four varieties of honey. Started by Larry Hasselman, this honey provider in Fremont, Mich. focuses on wholesome and natural processes that preserve the bees and produce high-quality products. With honey being such a great addition to so many EVOO and balsamic combinations and recipes, <a href="https://www.fustinis.com/blog/go-local-with-flavorful-honey-at-fustini-s/">offering these Michigan-made honeys</a> is just another way we show our passion for our communities.</p>
<h5>3. Petoskey’s Manna Food Project Fundraiser</h5>

<p>At Fustini’s we like to celebrate our store anniversaries by giving back. This year was the 10 year anniversary of our Petoskey store location. As a way to celebrate this decade of serving our Petoskey customers and community, we had the amazing opportunity to <a href="https://www.fustinis.com/fustinis-blog-1/celebrate-healthy-food-with-petoskey-s-delicious-decade-fundraiser">host a multi-month long fundraising campaign</a> for an organization that stands for quality food. Manna Food Project is a nonprofit working to provide healthy and nutritious meals for their neighbors in need. From May 8 - September 15, Petoskey stores donated $1 of each bottle of EVOO or vinegar sold to Manna Food Project, That $1 provides 4 meals for those in need.</p>
<p>Over the summer, Fustini’s was able to donate over $8,000 to support Manna Food Project.</p>
<h5>4. Iron Fish Distillery Honey Vinegar and Maple Syrup</h5>

<p>Bourbon and balsamic - what could be better? Our commitment to our great state of Michigan also included <a href="https://www.fustinis.com/fustinis-blog-1/amp-up-your-sauces-and-syrups-with-these-new-items">developing a partnership</a> with Iron Fish Distillery in Thompsonville, Mich. to offer maple syrup and a white wine honey vinegar. The maple syrup uses a bourbon barrel aging process to infuse the syrup with the great, fresh flavors of bourbon.</p>
<p>The distillery also teamed up with Fustini’s in creating a Honey Vinegar, made with honey from local hives also in Thompsonville. With so much Michigan-focused flavor, these new products are exciting features to our commitment to Michigan.</p>
<h5>5. New Flavors</h5>
<p>In addition to our emphasis on Michigan-made pantry items and vinegars, we also added a few new flavors to our Fustini’s line-up. We’re excited to offer these new products to continue to inspire delicious dishes to keep your creativity cooking.</p>

<p><a href="https://www.fustinis.com/new-items/riserva-dark/">Riserva Balsamic Vinegar</a> - we’ve deepened the density of this new balsamic to give it a smooth and versatile flavor. With notes of plum, honey and cherry, this balsamic is great as a finishing touch to many dishes like desserts, veggies, meats and more.</p>
<h5>6. New Chefs</h5>
<p>In 2019, we added on to our team of amazing and experienced chefs who host our School of Cooking classes at all of our stores.</p>
<p>In Holland, Chef Sofia Occihialini came on board to share the art of Italian cooking with her interactive pasta workshops and Italy-inspired menus.</p>
<p>In Petoskey, we’re excited to welcome Christie Struck on board who has a passion for fun flavors in the kitchen. Also in Petoskey is David Ogren whose cooking style emphasizes fresh, local ingredients.</p>
<p>In Traverse City, we welcomed vegan enthusiasts Lisa Robinson and Ryan Moberly who started “Radish,” vegan street food in Traverse City. Their creative and innovative class themes are perfect for trying out some delicious healthy alternatives.</p>

<h5>7. New Meal Kits</h5>

<p>We know gathering all the ingredients you need for a particular recipe can take time. This year, we’ve helped you streamline your dinner planning with a whole new selection of meal kits. These kits come with some of the key flavoring ingredients for a delicious dish. All you have to do is pick up a few other items to complete the meal. For example, in the spring, we launched a cedar plank salmon meal kit that already includes the cedar plank, as well as flavoring ingredients of EVOO and balsamic. Fall and winter kits include a Parmesan-crusted fish and a pan-seared pork tenderloin. We’ll have even more options coming out in the Spring. <h5>10. Fresh Take at Traverse City</h5>

<p>In July 2019, the Traverse City location completed their kitchen project to incorporate a grab-and-go lunch spot called Fresh Take. Here, customers can get a quick bite to eat over their lunch break. They also offer catering for organizations, as well. What’s even better is that Fresh Take emphasizes incorporating fresh, local ingredients into all their menu offerings. <p>Have you ever taken a trip that influenced the trajectory of your life or decisions?</p>
<p>For the Fustini’s Oils and Vinegars team, that trip was over to Spain this fall. This week-long adventure incorporated much to see, learn, experience and taste. The traveling team included representatives from each FOV store and the School of Cooking.</p>
<p>So much was packed into the week of travel, work, tasting - and a lot of walking.</p>
<p>As a result of what they saw and experienced, the traveling team is so much more aware of how important it is to have the freshest olive oil. They also confirmed that the source used in Spain is dedicated to creating and providing the freshest product possible.</p>
<p>The FOV “Select” olive oil is what the team saw being harvested and milled with their own eyes. This oil will be greener, have more of a “black pepper” finish and is higher in polyphenols. The olives in this oil require a more intense harvest process and has a lower oil yield. That makes this oil a rare premium olive oil that the team has “selected” themselves.</p>
<p>While one of the main goals was to experience this select olive oil, the team also learned and explored the amazing country of Spain and its rich culture. Here’s a quick snapshot of some of the things the team saw and experienced during their week in Spain.</p>
<h5>Madrid Tapas Tour</h5>
<p>After a long flight across the Atlantic and a lot of travel, one of the team’s first experience was an authentic tapas and history tour through a portion of Madrid. Through the art of food, they explored and enjoyed just a taste of what the beautiful city of Madrid has to offer. Of course, many of what they tasted and experienced included olive oil right from Spain.</p>

<h5>Highlights Tour at the Prado Museum</h5>
<p>The second day in Madrid featured a tour through the Prado Museum where the team could learn and experience the culture and history of where the specialty single varietal olives come from.</p>
<p>The day concluded with a fun and upbeat Flamenco performance, which is a traditional Spanish dance.</p>
<h5>Olive Fields, Baeza</h5>
<p>From Madrid the team traveled over to Baeza near Jaén to get a deep dive experience of oil fields and culture.</p>
<p>They visited the Olive Culture Museum to grow in their knowledge of oil harvest, production and how little the process has changed over thousands of years.</p>
<p>They also ventured out into the vast fields of olive trees that extend as far as they could see. In fact, they discovered that Jaén and the surrounding area has over 66 million olive trees. That’s a lot of olives!</p>

<h5>Terra Oleum Learning Center, Jaén</h5>
<p>From the fields to the mill, the team witnessed the amazing process of turning olives into olive oil.</p>
<p>They visited Terra Oleum, an olive research and educational facility. Like they would do in the store, they tasted and tried a variety of oils from different presses to better understand the differences in oil varieties and ages of the crush. Through a “mini milling” demonstration, they discovered how fast olive “paste” will begin to oxidize, even before the oil is extracted.</p>
<h5>Andrés Aguilar Olive Mill, Linares</h5>
<p>After the olive fields, the team visited an olive mill where Fustini’s olive oil is milled. They were able to watch the whole process from start to finish. The process, which took about 90 minutes, included olives being delivered by trucks to tasting freshly crushed olive oil. What they found truly amazing was how fast olives go from being on the tree to being harvested and pressed. For EVOO in Spain, freshness is a top priority.</p>

<p>In addition to being able to see the process of olive oil pressing, they also experienced the freshness of oil at mealtimes during the trip. With a chef and food-inspired travelers, the team paid close attention to the olive oil used in meals. They discovered new, innovative ways to incorporate olive oil into the traditional and cultural dishes they tried. With their experience in tasting fresh oil, they could also easily tell when the bottle of oil on their table was bad or old.</p>
<h5>Other Stops</h5>
<p><strong>Córdoba -</strong> The journey to Cordoba included a tour of Los Patios de Córdoba, a source of family life and entertaining in Spanish culture. It was interesting to learn how flowers and water features were used to keep the area cool in the heat of summer.</p>

<p><strong>Granada Alhambra -</strong> The team took in the history and culture of Granada Alhambra as they headed south. The views from the ancient palaces overlooking the city are truly amazing.</p>
<p><strong>Malaga -</strong> The last stop on their trek through Spain was a city right on the coast of the Mediterranean at the seaport of Malaga. Fresh seafood and fresh olive oil - it can’t be beat!</p>
<h5>Back Home</h5>
<p>What an exciting, inspiring and enlightening week it was. While the team loved their time in Spain, they were also eager to return home to take what they learned and bring it to the Fustini’s experience for their customers, employees and partners. <p>At our Petoskey Fustini’s Oils and Vinegars location, we’re turning ten years old, too. But save the streamers, birthday cake and giant balloons for the kids. This year, we’re celebrating by giving back.</p>
<p>Fustini’s puts a high value on the communities in which we live and work. So it only makes sense that in honor of this ten-year milestone, Fustini’s is committed to helping support <a href="http://mannafoodproject.org/" rel="noopener" target="_blank">Manna Food Project</a> found right in Northern Michigan in Harbor Springs. Fustini’s will donate $1 for every single bottle of oil and vinegar sold, now through Sept. 15, 2019. That one dollar donation provides four meals to those in need. With one bottle, you can provide four people with a satisfying and nutritious meal. Easy as that.</p>
<p>“Fustini's has been so incredibly lucky to be part of such a great and welcoming community,” Charlene Hunt says, manager of the Fustini’s Petoskey store. “We want to give back to the community that has supported us for 10 years.”</p>

<p><a href="http://mannafoodproject.org/" rel="noopener" target="_blank">Manna Food Project</a> is a 501(c)(3) non-profit organization that works to provide food for those in Antrim, Charlevoix and Emmet counties. Starting in 1987, a group of local leaders saw a need for healthy, nutritious meals that wasn’t being met among their neighbors. What had originally started as a soup kitchen has transformed into a massive distribution center that walks alongside families and individuals in need, promoting a healthier and happier community.</p>

This Food 4 Kids program provides elementary age kids backpacks of healthy, kid-friendly food in part to meet their nutritional needs over the weekends when they don’t get meals at school.</p>
<p>Manna’s community engagement continues through partnering with local organizations in hosting cooking classes, dinners for the community and other fun and educational opportunities to share the value and importance of fresh and healthy food. This health education initiative is designed to provide families and individuals the resources they need to prepare meals full of nutritional value which improves their community’s health and overall well-being.</p>

<h5>What is vinegar?</h5>
<p>In its most general description, vinegar comes from fermenting an alcohol into an acidic liquid. That acidic liquid is the sweet, tart and recognizable vinegar taste.</p>
<p>Before we get too scientific, let us assure you that it’s really just combining alcohol and oxygen in a fermentation process that creates acetic acid and water. In this process, the natural bacteria that’s found in fruits and starches are activated. When this bacteria takes up the alcohol, acetic acid is the result. While there are different processes in creating vinegars, the general process involves creating acetic acid from alcohol and oxygen.</p>
<p>When the naturally-occurring bacteria creates cellulose, it’s called “mother of vinegar.” While it sounds somewhat odd, this part of vinegar ensures that it’s been made naturally and maintains the important health benefits that vinegar has. When vinegar is not made naturally, that healthy bacteria that makes vinegar so beneficial is gone.</p>
<h5>What are the types of vinegar?</h5>
<p>The type of vinegar comes from what its original source is - what it’s made out of.</p>
<p>As the basis of vinegar is alcohol and oxygen, some vinegar comes from grape wine that is fermented. Wine vinegar, for example, comes from red or white grape wine. Fruit wine vinegar comes from fruit wine. Rice vinegar comes from rice wine. Honey vinegar comes from, you guessed it, honey wine. Ever heard of potato vinegar? This comes from potato vodka that’s fermented. Malt vinegar is produced from beer with malted grains.</p>
<p>But balsamic doesn’t come from balsamic wine. This unique type of vinegar that’s full of flavor and taste is made from grape must that’s been cooked down.</p>
<h5>What makes balsamic unique?</h5>

<p>The <a href="https://www.fustinis.com/order/category/vinegars_11/" rel="noopener" target="_blank">balsamic’s</a> uniqueness comes from its source - the grape must. What is must? It’s the whole pressed grape, including skins, seeds, stems and the juice.</p>
<p>To ensure its quality is up to the highest of standards, balsamic vinegar has several requirements in order to be considered authentic “balsamic vinegar.” These requirements are broken down into categories based on its source and what process the grape must goes through.</p>
<p>The balsamic you find on the shelves at Fustini’s Oils & Vinegars is in the category of PGI, or Protected Geographical Indication. The grape must consists of local grape varietals from the northern region of Italy. Then, the grape must is mixed with barrel aged wine vinegar and aged. The production of this type of vinegar also must take place in Modena or Reggio Emilia, Italy in order to be considered authentic <strong>Balsamic Vinegar</strong>. As the balsamic ages, it’s stored in oaken kegs made of woods such as chestnut, cherrywood and others to add additional character and flavor to the vinegar.</p>

For example, the grocery store varieties can contain unhealthy additives like sweeteners, thickeners and colorings. From the type of olive to the flavor it brings to your food, the characteristics that <a href="https://www.fustinis.com/blog/what-makes-evoo-evoo-what-you-should-know-about-an-oil-unlike-any-other">make EVOO. </a>Extra virgin olive oil is important when it comes to determining the quality of the product.</p>
<p>While we love infusing fresh flavors into our olive oils, such as Blood Orange or Tuscan Herb, we also pride ourselves on the SELECT extra virgin olive oils that incorporate their own flavor profile. This oil is produced from specific olives from specific locations, either northern or southern hemisphere countries based on the time of year. To be considered SELECT, these oils also rely on the flavor of the olive. Other factors such as the location, growing conditions and time of harvesting all factor into the flavor as well. You can also use the term “Single Varietal" or"Mono Cultivar” to describe these SELECT olive oils.</p>
<p>These varietal oils can be a staple in all your cooking, baking or food preparation. But what really sets them apart from the store-bought, bottom-shelf olive oil you’ll find in grocery stores? Here, we share three important things about SELECT extra virgin olive oils that make it an oil worth trying.</p>

<h5>1) There are Several Types of Olive Varieties</h5>
<p>Not all olives are created the same. The oils we feature each have their own unique flavor profile. Just like not all Jonagold apples taste like Honeycrisp apples, not all olives carry the same tastes.</p>
<p>The differences between these flavors come in the level of bitterness and ripeness. They also may have different levels of pungency, giving them a more smooth or bitey taste. The different varieties don’t relate to the quality of the oil but rather the flavor profile of the oil.</p>
<p>Here are the typical characteristics of some of our olive oil varieties, for each of which you can find an olive oil with that flavor. </p>

<li>Coratina - herbaceous, bitter, pungent, stable</li>
<li>Frantoio - fruity, herbaceous, medium bitterness, pungent</li>

<li>Koroneiki - fruity, herbaceous, very stable</li>
<li>Peranzana - grassy, robust intensity</li>
<li>Picual - fruity, medium bitterness, high stability</li>

<p>Whether you’re looking for a very delicate flavor to use in all your dishes or a more bitter, pungent oil that pops some flavor, you can find it in SELECT olive oil.</p>
<h5> 2) Olives are Harvested at Specific Times</h5>
<p>The flavor of an olive, and therefore the oil made from such olive, also depends on the stage at which it is harvested. With a SELECT extra virgin olive oil, the flavor distinctions that come with different stages of harvest - or maturity stages - greatly influence the profile of the oil.</p>
<p>So what are these stages that have so great of an impact on the characteristic of olive oil? These three stages include;</p>
<p><strong>Green Fruit: </strong>The green or immature olive is one that is firm in texture. The oil that comes from these is bitter, grassy and pungent.</p>
<p><strong>Veraison: </strong>The veraison fruit is at the peak for oil production as it turns to a more yellow-green color. The flavor of these oils still has some bitterness and pungency but is not as strong as green fruit.</p>
<p><strong>Black Fruit:</strong> As the olives continue to ripen, their color turns darker and tastes much less bitter and pungent. These olives produce a lot of oil and are often sweeter.</p>

<p><strong>Cooking</strong><br/>Cooking up a recipe that needs oil? Using extra virgin olive oil will bring out its natural flavors. Remember that while it varies from oil to oil, the average smoke point of EVOO is 350 degrees, with olive oils with higher polyphenol counts having a higher smoke point. It’s also best to cook with robust green oils, which have the highest smoke point.</p>

However, there are always exceptions to this trend depending on what you’re preparing and which flavors you want to bring out in the dish. Learning the qualifications of what makes an EVOO an EVOO helps you determine which oils are actually extra virgin and which are fake oils. And, who knows, you might even impress some of your friends with your EVOO lingo.</p>
<p>To get you started on your vocab list, we’ve shared 18 words related to the tasting, benefits and overall experience of extra virgin olive oil.</p>
<h5>1. Acidity</h5>
<p>Yes, olive oil can be acidic. The acidity level in an oil refers to the amount of free fatty acids. This is measured by the free oleic acid content. Extra virgin olive oil must have an acidic level less than 1%.</p>
<h5>2. Aroma</h5>
<p>As you sample an EVOO, you’ll want to be sure to smell the oil first. By smelling, you take in the aroma of the oil and you’re more easily able to identify the various flavors you sense in the oil.</p>
<h5>3. Balance</h5>
<p>In tasting EVOO, balance refers to the harmony of the various flavor profiles in an oil. When the fruitiness, bitterness and pungency are all balanced, that can make the perfect oil.</p>

<p>One of the flavor characteristics you may experience as you taste an oil, bitterness refers to the harsh and dull sting you feel on your tongue.</p>
<h5>5. Centrifuge</h5>
<p>In the production of olive oil, the centrifuge separates the oil of the olive from the water and other olive residue.</p>
<h5>6. Complexity</h5>
<p>One of the fun things about EVOO is that there is rarely just one flavor going on while you taste. The flavor of EVOO has complexity, meaning it contains a combination of flavors that are either in harmony or unbalanced.</p>
<h5>7. Floral</h5>
<p>Word to describe an oil that has the aroma of flowers or perfume.</p>
<h5>8. Free Fatty Acids (FFA)</h5>
<p>On a chemical level, olive oil is made out of triglycerides, which are one glycerol molecule attached to three fatty acid chains. When the fatty acid chains break off the glycerol molecule due to bruised fruit or long storage times, they become free fatty acids (FFA). In an oil, the higher the FFA level, the more acidity, which is a lower quality oil.</p>
<h5>9. Fusty</h5>
<p>No, not “fustinify”. This term refers to a by-product of fermentation. This is used in making table olives, which are fermented, not fresh like oil olives.</p>
<h5>10. Hydroxytyrosal antioxidant</h5>
<p>Aside from a mouthful to say, this is a property in EVOO that takes care of your skin that helps to prevent aging and heals abrasions.</p>
<h5>11. Oleocanthal</h5>
<p>This refers to the anti-inflammatory properties found in EVOO that can improve your health.</p>
<h5>12. Peroxides</h5>
<p>When olive oil oxidizes, it creates peroxides. More oxygen means more peroxides, which causes the oil to go rancid.</p>
<h5>13. Phenolic compounds</h5>
<p>EVOO has at least 30 phenolic compounds. Such compounds are great for your health and can help improve metabolism.</p>

<h5>14. Polyphenols</h5>
<p>When thinking about the health benefits of EVOO, polyphenols are of the most important. These are antioxidants that help to lower blood pressure by clearing arteries. The taste of these polyphenols are bitter.</p>

<p>When you think of pungent, you may think of a very strong flavor. Pungency in an oil refers to the mild irritation or burn in your throat. In addition to sweet, salty, sour and bitter, pungent is another flavor you can experience when tasting an oil.</p>
<h5>16. Rancid</h5>
<p>Rancid is a description for when oil goes bad. When the oil breaks down, it gives off stale flavors that ruin the quality of the oil.</p>
<h5>17. Ripeness</h5>
<p>Refers to the status of the fruit when it is harvest. The ripeness of an olive can range from bright green and hard to soft, fleshy black. The ripeness of the fruit has strong correlations to the quality of the oil that’s made from it.</p>
<h5>18. Robust</h5>
<p>A word to describe the flavor of the oil. It refers to a full-bodied or strong flavor that pairs well with other strong flavors.</p>
