Carrot Soup with Yogurt

Ingredients
- 2 tablespoons Fustini's Cilantro and Onion Olive Oil
- 1 yellow onion, small dice
- 1 pound carrots, peeled, small dice
- ½ teaspoon ground turmeric
- 1 teaspoon ground coriander
- 1 tablespoon Fustini's Ginger and Honey Balsamic
- 1 qt water
- 1 cup greek yogurt
- ½ cup cilantro leaves

Directions
- Heat oil in a medium saucepan over medium heat. Add the onions and carrots and sauté, until carrots are tender. Add in turmeric, coriander, and Ginger and Honey Balsamic, and cook until aromatic. Add in water, bring to a boil and puré,e.
- Stir in Greek yogurt, season to taste, then pour soup into bowls. Garnish with the cilantro, and drizzle extra Cilantro and Onion Oil on top.
