Ingredients
- 2 tablespoons Fustini’s Medium SELECT olive oil, plus more for the cauliflower
- 2 tablespoons butter
- 3 tablespoons onion, finely minced
- 1 teaspoon Fustini’s Sicilian Lemon Balsamic Vinegar
- 1 teaspoon lemon zest
- salt and pepper
- 1 cup dry bread crumbs
- 1 head cauliflower, trimmed and blanched
- 1 hard-boiled egg, finely chopped

- Preheat oven to 350 degrees. Heat Fustini&rsquo,s SELECT olive oil in a large skillet over moderate heat. Just as oil starts to smoke, add butter and cook until fully melted and brown and add the onion. Cook onion, stirring constantly, until soft - 5 minutes. Add Fustini&rsquo,s Sicilian Lemon Balsamic Vinegar, lemon zest, salt and pepper and bread crumbs and cook until bread crumbs are browned, stirring constantly. Place cauliflower in the baking pan and drizzle with some Fustini&rsquo,s SELECT olive oil and then the browned crumbs and place in the preheated oven until hot - 10 minutes. Remove from oven and serve with a hard-cooked egg on top for garnish.
