Coconut Sticky Rice

Ingredients
- 2 cups Sushi Rice, rinsed
- 2 cups coconut milk
- 2 teaspoons Fustini’s Coconut Vinegar
- 2 tablespoons sugar
- 1 tablespoon mint, minced

- In a small saucepan combine all ingredients except for vinegar and mint and stir. Place on medium heat and mix until the mixture has been brought up to a boil. Once boiling, reduce to lowest setting, cover, and cook until liquid has been absorbed, about 15 minutes. Remove mixture from heat and stir in Fustini&rsquo,s Coconut Vinegar. Place rice in cooler until completely cold. Fold in mint leaves and mold into the desired shape. Serve and enjoy.
