Ingredients
- 1 tablespoon Fustini’s Robust SELECT olive oil
- 2 Yukon Gold potatoes, boiled, peeled and cut into chunks
- 2 cups cooked corned beef, chopped
- 1 small onion, small dice
- 1 red pepper, all pith removed and small diced
- salt and pepper
- 1 egg, poached
- Spicy 1,000 Island Dressing, garnish (optional)

Directions
- Place all ingredients into the food processor and pulse to combine. Form into patties and fry in oil until crispy and hot. Serve with poached egg and Spicy 1,000 Island Dressing.
