Farro Salad with Walnuts, Cranberries, And Goat Cheese

Ingredients
- 6 cups salted water
- ¾ cup farro
- 1 tablespoon Fustini's Cranberry Pear Balsamic Vinegar
- 1 small shallot, fine diced
- 2 tablespoons parsley, chopped
- 3 tablespoons Fustini's Medium SELECT olive oil
- 1/3 cup dry cranberries
- 1/3 cup chopped walnuts
- ¼ cup goat cheese, broken up
- salt and pepper

Directions
- Bring salted water to a boil, add faro and cook 20 to 25 minutes or until tender. Drain and transfer to a bowl.
- Toss farro with cranberry balsamic and oil, and season with salt and pepper. Stir in shallot, parsley, cranberries, walnuts, and goat cheese. Check for seasoning and serve at room temperature.
