Honey Glazed Beets with Arugula

Ingredients
- 4 large beets, with greens
- Fustini's Robust SELECT olive oil
- 1/4 cup honey
- salt and pepper
- baby arugula
- beet greens from above
- toasted cashews
- 1 avocado, ripe, skin and pit removed
- 1 Jalapeno, seeded
- 1/4 cup buttermilk
- salt and pepper
- 1 tablespoon Fustini's Jalapeno Lime balsamic
- 3 tablespoons milk, or more as needed

Directions
- Preheat oven to 375 degrees. Remove greens from beets and save. Wash and scrub beets then rub with olive oil. Place beets into a baking dish and roast in the hot oven until tender - 45 minutes. Remove from the oven and let cool. As soon as you can handle, peel beets and cut into chunks. Place chunks back into the baking dish and drizzle with honey. Bake again in the hot oven until honey is boiling and beets are glazed - 5 to 10 minutes, stirring every couple of minutes. Let cool.
- Chiffonade the beet greens and mix with arugula. Divide greens between salad plates and top with chunks of beets and some toasted cashews. Drizzle all with Spicy Avocado Dressing and serve.
- Blend all together using enough milk to make the right consistency.
