Ingredients
- 1 teaspoon basil
- 1/2 cup English cucumber
- 1/2 cup garbanzo drained beans, canned
- 1 teaspoon lemon, zest
- 1 teaspoon mint
- 1/4 teaspoon oregano, dried
- 1 teaspoon parsley
- 1/2 cup red bell pepper
- 1/4 cup red onion
- 1/2 cup Roma tomato
- 1/2 cup Kalamata olives, pitted and sliced
- 2 tablespoon lemon juice
- 1 cup couscous, instant
- 1/4 teaspoon black pepper
- 3/4 teaspoon Kosher salt
- 5 tablespoons Fustini's Meyer Lemon Olive oil
- 1 tablespoon Fustini's Vinoso vinegar
- 2 tablespoon feta cheese

Directions
- Cook couscous, instant, according to directions on the package. Set aside to cool. Dice bell pepper, cucumber, red onion, Roma tomatoes. Chop parsley, basil and mint. Create vinaigrette by mixing and emulsifying olive oil and vinegar with lemon juice. Mix all ingredients and stir. Season with salt and pepper. Top with Feta cheese.
