Roasted Corn Salad

Ingredients
- 6 ears corn, cut off the cob
- 2 tablespoons Fustini's Cilantro and Onion olive oil
- 1 red bell pepper, small dice
- 2 shallots, small dice
- 3-4 radishes, shaved fine
- 2 tomatoes, small dice
- 1 bunch salad greens (romaine, arugula, spring mix)
- 3 oz goat cheese in small pieces
- 2 tablespoons Fustini's Medium SELECT olive oil
- 3 tablespoons Fustini's Iron Fish Honey vinegar
- salt and pepper to taste

Directions
- In a large bowl, toss corn with cilantro and onion oil. Season with salt and lay on a sheet tray. Place corn under the broiler for 2-3 minutes until golden brown, then remove to a bowl.
- Add remaining ingredients, toss and taste to adjust seasoning.
