Roasted Tomato Onion Salsita

Ingredients
- 4 cups grape tomatoes, halved
- 1 yellow pepper, julienned
- 1 yellow onion, thin sliced
- salt and pepper to taste
- 1/2 cup Fustini's Delicate SELECT olive oil
- 1 cup Fustini's Michigan Apple balsamic
- 1/2 cup brown sugar
- 2 tablespoons Adobo Sauce

Directions
- Combine all ingredients and spread on a parchment lined sheet pan. Place in 350 degree oven. Roast until dark caramelization (20-30 minutes), Remove from oven and cool completely. Top with Salsita Syrup.
- Combine all ingredients and simmer to combine. Remove from heat to cool. Once cooled, lightly drizzle over roasted tomatoes and onion. Stir to combine.
