Shrimp Ceviche

Ingredients
- 1 pound shrimp, peeled and deveined
- 2 limes, zested and juiced
- 2 lemons, zested and juiced
- 1 cup diced papaya
- 1 cup diced cucumbers
- 1 avocado, small diced
- ½ cup minced red onion
- 1 jalapeno, seeded and minced
- ¼ cup packed cilantro
- 1 tablespoon Fustini's Blood Orange olive oil
- 2 tablespoons Fustini's Delicate SELECT olive oil
- salt and pepper

Directions
- Bring a pot of salted water to a boil, add shrimp and cook about 2 minutes until they turn from translucent to opaque, drain and let cool slightly.
- Chop the shrimp up into ½, inch chunks and place in a bowl with the lemon and lime juice and zest. Let sit in the cooler for about an hour for best results.
- Bring the shrimp out and toss in the remaining ingredients. Taste and adjust seasoning if necessary.
