Ingredients
- 1 Tbsp Fustini's Garlic Olive Oil
- ½ of a Yellow Onion, Small Dice
- 1 Tomato, Small Dice
- ½ of a Red Bell Pepper, Small Dice
- 1 Cup Arborio Rice
- 2 Cups Vegetable Stock
- Small Pinch of Saffron
- 8 Shrimp
- 1 Tbsp Chopped Parsley

- Heat garlic oil in a pan over medium and add onion, tomato, and pepper. Cook until soft and translucent. Add rice and cook with the vegetables for a minute, then add the stock. Add saffron and bring stock to a boil. Reduce to a simmer and cook, covered for 10 minutes.
- When rice is almost cooked, nestle shrimp into the rice and turn heat up to medium. Cover pan and cook for 5 minutes until liquid is absorbed and shrimp are cooked through. The bottom of the rice should have developed some caramelization. Spoon paella onto plates and garnish with parsley.
