Summer Salad with Creamy Mustard Vinaigrette

Ingredients
- sliced radish
- shredded radicchio
- diced tomato
- red endive
- baby zucchini, sliced
- sugar snap peas
- baby carrots, sliced
- cucumber, sliced
- asparagus, peeled and sliced thin
- arugula
- salt and pepper
- 1 egg yolk
- 2 tablespoons wholegrain mustard
- 3 tablespoons Fustini’s 18 Year Balsamic Vinegar
- 1 garlic clove, minced
- 1 small shallot, minced
- 1/2 to 1 cup Fustini’s Delicate SELECT olive oil
- salt and pepper

Creamy Mustard Vinaigrette
Directions
- Arrange vegetables and lettuce on a plate. Drizzle dressing over top and season with salt and freshly ground black pepper.
- Whisk together the egg yolk, mustard, vinegar, garlic and shallot. While whisking, slowly add enough olive oil to the desired thickness. Season with salt and pepper and use immediately.
