Watermelon Halloumi Skewers

Ingredients
- 2 cups watermelon, cut into 1-inch cubes
- 1 8-ounce block of halloumi cheese, cut into 1-inch cubes
- salt and pepper
- 1/4 cup Fustini's Basil Crush olive oil, plus more for drizzling
- 1/4 cup Fustini's Meyer Lemon olive oil
- 1/2 teaspoon lime zest
- fresh mint leaves for skewering
- fresh basil leaves for skewering

- Preheat grill to medium-high. I like to keep mine around 400 degrees F. Skewer the watermelon and halloumi. (3 pieces of watermelon to every 1 piece of halloumi.) Brush the watermelon skewers with olive oils. Season with salt and pepper. Place the skewers on the grill (you can use a grill pan if you wish! But directly on the grates is fine too) and grill for 1 to 2 minutes per side, rotating the skewers until golden. Remove and drizzle the skewers with the mint and basil oil. Garnish with a few chopped leaves.
