West African Chicken Peanut Soup

Ingredients
- 6 cups chicken, cooked, diced
- 2 onions, diced
- 3 tablespoons curry powder
- salt and pepper to taste
- 3 tablespoons Fustini's Garlic olive oil
- 1-3 tablespoons Fustini's Aji Verde Crush olive oil
- 5 quarts of chicken stock
- 1/2 cup tomato paste
- 3/4 cup canned diced tomatoes, including juice
- 4 cups chunky peanut butter (do not use smooth)

- In a large stockpot over medium heat, sauté, chicken, onion, curry powder, salt and pepper in the Fustini's olive oils until the onions are soft. Add chicken stock, tomato paste, tomatoes and peanut butter. Stir constantly until the soup is hot. But do not allow it to boil. Divide among soup bowls and drizzle with a little more olive oil if you like spicy! Any leftover soup can be frozen.
