White Bean Tuna Salad

Ingredients
- 1/2 red onion
- 3 tablespoons Fustini's Iron Fish Honey vinegar
- 1 baguette, sliced
- Fustini's Medium SELECT olive oil (plus more for garnish)
- 1 pint cooked white beans
- 8 ounces cooked tuna or salmon
- 1/4 cup Fustini’s Meyer Lemon olive oil
- 1 clove garlic, finely shaved
- 1 tablespoon parsley, chopped (plus more for garnish)
- salt and pepper, to taste

Directions
- Thinly slice red onion into a small bowl. Drizzle Iron Fish Honey vinegar and let sit for 15 minutes.
- Slice baguette, drizzle Fustini's single varietal olive oil, salt and pepper. Bake for 6-8 minutes at 350 degrees until lightly brown. Remove from oven.
- In a large bowl, combine beans, tuna, Meyer Lemon olive oil, garlic, red onion mixture and parsley. Mix well to combine, taste for salt and pepper. Spoon salad mixture onto crostini. Top with additional parsley and a drizzle of olive oil.
