On a visit to Michigan I popped into a Fustini's shop. From their tasting room I chose the Sicilian Lemon Vinegar. This vinegar is a complete surprise. I did not expect the flowery lemony taste. Quite sweet. Nor the ever so slightly syrupy consistency, unusual in a vinegar. I find that using it sparingly in a simple vinaigrette, with good olive oil, salt and pepper …. with a delicate Boston lettuce and a crisp bread to sop up the sauce, is the best way to enjoy its fresh, crisp flavor. Our favourite vinaigrette, by far.
