Apple, Celery and Blue Cheese Salad

  • 1 Honeycrisp apple, finely julienne
  • 1/2 cup celery - sliced on the bias
  • 1/2 cup blue cheese - crumbled
  • spring mix
  • fresh parsley
Balsamic Vinaigrette


Step 1. 

Combine apple celery and cheese.   Toss spring mix with half of the vinaigrette and divide among serving plates.  Toss the apples with the rest of the vinaigrette and place a dollop on top of the spring mix.  Garnish with parsley and serve.

Step 2.  Balsamic Vinaigrette

Whisk together vinegar, salt and pepper.  Whisk in enough olive oil to taste.
