Combine apple celery and cheese. Toss spring mix with half of the vinaigrette and divide among serving plates. Toss the apples with the rest of the vinaigrette and place a dollop on top of the spring mix. Garnish with parsley and serve.
Whisk together vinegar, salt and pepper. Whisk in enough olive oil to taste.
