Artichoke Hot Brown

Submitted by Corporate Chef Andy Stewart

  • 1 tablespoon Fustini's Tuscan Herb Olive Oil
  • 1 tablespoon butter
  • 1 small shallot, minced
  • 1 garlic clove, minced
  • 2 tablespoons flour (or almond flour)
  • 1 cup milk
  • 1/4 cup chicken stock
  • pinch nutmeg
  • Salt and Pepper
  • 1/2 cup Gruyere Cheese, grated
  • 1 cup artichoke hearts, sliced
  • 1 cup bacon, cooked, crumbled
Garlic Pitas

Step 1.

Preheat oven to 375 degrees.  Heat olive oil and butter in a small pot over moderate heat and add shallot and garlic.  Cook one minute, stirring, and add flour.  Stir to incorporate then cook, stirring, another minute.  Add milk and cook until thickened.  Add stock, then season with nutmeg salt and pepper and continue cooking until simmering and thick.  Add cheese and whisk to combine.

Place artichoke hearts in oven-proof ramekin or boat, layer cooked bacon on top of the artichoke slices.  Pour sauce over top and bake in the hot oven until bubbly and brown - 10 to 12 minutes.  Serve with Garlic Pitas.

Step 2.  Garlic Pita

Preheat oven to 375 degrees.  Cut pitas into triangles and lay on the baking sheet in a single layer.  Drizzle olive oil over the top of the pitas and season with salt and pepper.  Bake in the hot oven until golden brown - 10 to 15 minutes.  Remove from oven and let cool to room temperature.
