Arugula salad
This salad tastes as good as it looks, and it is so simple to make. The dressing treatment really highlights the strawberries- fresh and delicious!

Macerate the strawberries by placing them in a bowl and tossing them with the sugar and balsamic. Meanwhile, place the almonds on a sheet tray and bake in a 350-degree oven until golden brown, stirring every 2-3 minutes.
When the almonds are done, place the arugula in a bowl, add the almonds and manchego cheese followed by the strawberries. Add the Meyer Lemon olive oil, season with salt and pepper, toss and serve.
