For a bite-sized appetizer, separate biscuit layers in half. Fill with 2 tablespoons of filling and bake as directed. Adapted from delish.com
Preheat oven to 375 degrees F. Line a baking sheet with parchment paper. In a large skillet over medium heat, cook bacon until crispy. Remove bacon strips and wipe out grease, leaving residual grease in the pan. Chop up the bacon.
Add onion to the pan and cook until softened. Stir in garlic and cook for 30 seconds add vinegar to deglaze the bottom of the pan. Add ground meat, season with salt and pepper. Cook until no longer pink and most moisture has evaporated. (drain any excess fat).
In a medium bowl, combine bacon, meat mixture, relish, cheese and mustard.
Flatten each biscuit round into about 1/4" thickness. Top each round with about 1/4 cup of meat mixture in the middle. Pick up two opposite sides of the round and pinch together. Work your way down each side, pinching the dough (like a dumpling).
Place the bombs, seam side down on the baking sheet. Brush the tops with olive oil and a few sesame seeds. Bake until the biscuits are golden and cooked through, about 20 minutes. Serve with ketchup.
