Prepare grill. Place garlic and Fustini’s Single Varietal Extra Virgin Olive Oil in a small saucepan and sauté over medium-low heat until garlic starts to get soft. Add Fustini’s balsamic and red wine, stirring constantly until liquid is reduced by half.
Wrap each filet around the perimeter with bacon slices, securing the bacon with toothpick. Lightly salt and pepper the filet. Grill to medium rare (about 5 minutes each side). Remove toothpicks and drizzle the top with balsamic wine reduction.
Garnish with sprig of rosemary.
