Baked Apples with Cajeta

Baked Apples with Cajeta

  • 1 cup sugar
  • 1/4 cup water
  • 1/2 cup heavy cream
  • 4 tablespoons butter
  • Large pinch salt
  • 3 ounces goat cheese


Step 1. 

Preheat the oven to 350 degrees.  Place apples into a baking dish. Combine pecans, brown sugar, butter, olive oil and salt then stuff this mixture into the centers of the apples.  Bake in a hot oven until all is melted and the apples are soft - 8 minutes. Drizzle apples with Cajeta and serve.

Step 2. 

Heat sugar and water in a large heavy bottom pot over high heat without stirring until brown and caramelized.  Remove from heat and add heavy cream. Return to heat and stir to combine while cooking. Once sugar and cream are combined, remove from heat and add butter and salt.  Stir to melt butter. Once butter is melted add goat cheese and whisk to melt. Once melted, keep warm.
