Preheat oven to 425 degrees. Coat a 9 x 13 baking dish with 2 tablespoons of olive oil. Spread onions in the bottom of the dish and top with chicken breasts.
In a bowl combine tomatoes, garlic powder, balsamic and remaining olive oil. Pour mixture over chicken and top with cheese. Bake 30 minutes or until the chicken is thoroughly cooked (internal temperature reaches 165 degrees).
If using feta cheese, add a pinch of oregano and black olives.
