Berry Crispy Cups

Berry Crispy Cups



  • 1/2 cup sugar
  • 1/4 teaspoon salt
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 5 cups berries (blueberries, cranberries, raspberries, strawberries)
  • 2 teaspoons Fustini's West Michigan Blueberry balsamic
  • 1 cup rolled oats
  • 4 tablespoons all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/2 cup butter, room temperature


Step 1. 

Preheat oven to 400 degrees.  In a medium bowl, combine sugar, salt, cornstarch and lemon zest.  Fold in berries, balsamic and gently stir to coat.  Divide the fruit mixture between 4 ramekins.

Step 2. 

In a small bowl add oats, flour, sugar, salt, cinnamon and stir to combine. Cut the butter into the dry ingredients until the mixture becomes like coarse crumbs.  Divide the crumb mixture over the fruit.  Place ramekins on a baking sheet and bake in the oven for about 30 minutes until the fruit is bubbly and the crumb topping is browned.

Allow fruit to cool slightly before serving.

    The only thing missing is a scoop of vanilla ice cream! I served this for a outdoor gathering and it was wonderful. I wonder if it would work with any of the other vinegars, too? I love the TC cherry and also the sweetness of some of the dark balsamics.
