Black Bean and Corn Salsa

Ingredients

  • ½ bag frozen corn, thawed, 2 – 3 ears of fresh corn, roasted and cut off cobs
  • 15 oz can of black beans, drained and rinsed
  • ¾ cup medium red onion, diced
  • 3 Roma tomatoes, diced
  • 1 – 1 ½ limes, juiced
  • ¼ cup Fustini’s Basil olive oil
  • 1 tablespoon salt
  • 1/2 teaspoon black pepper

Directions

Step 1. 

Mix all ingredients together, add salt and pepper to taste, and serve.
