Blood Orange Pancakes
The batter turned out thick and I was concerned these would be heavy . I was so wrong, these are fluffy and very tasty! Saving this recipe for sure ❤️

In a large mixing bowl, combine flour baking powder and baking soda. In a medium bowl, combine honey, Ricotta, egg, orange zest and Fustini's olive oil. Add the wet ingredients to the dry and mix well.
Drizzle extra olive oil on a hot griddle over medium-high heat. Use a large spoon to place on the griddle, using the back of the spoon to spread out creating an even circle. When the surface of the pancake looks dry, flip to the other side and cook for another 2-3 minutes.
To serve, garnish with fruit or your favorite balsamic syrup.
