BLT Chopped Salad

  • 2 cups butter lettuce, chopped
  • 2 cups romaine lettuce, chopped
  • 2-3 Heirloom tomatoes, chopped
  • 4 slices thick-cut bacon, fried and crumbled
  • 1 cup fresh sweet corn
  • 1 avocado, chopped
  • 4 ounces feta cheese, crumbled
  • 2 tablespoons Fustini's Basil olive oil
  • 1 tablespoon Fustini's 18 Year balsamic
  • 1/4 cup mayonnaise
  • juice of 1/2 a lemon
  • salt and pepper to taste

Step 1. 

In a large bowl, combine lettuce, arugula, tomatoes, corn and avocado.

In a small bowl whisk together salt, pepper, olive oil, balsamic, mayonaise and lemon juice.  Toss in the salad to coat.  Fold in bacon and feta before serving.
