BLT Pasta Salad

  • 1 pound pasta (rigatonio, mostacoli or farfalle)
  • 3 tablespoons Fustini's Garlic olive oil
  • 1 small onion, finely chopped
  • 1/2 cup white wine
  • 4 tomatoes, seeded and chopped
  • 1/2 pound sliced bacon, cooked and drained
  • salt and pepper to taste
  • 1/4 cup fresh basil, coarsely chopped
  • 2 cups coarsely chopped fresh spinach
  • Fustini's Basil olive oil, for drizzling
  • 3/4 cup Romano cheese, grated


Step 1. 

Cook pasta according to package directions until al dente, drain.

Step 2. 

In a medium saucepan, heat the Garlic olive oil over medium heat.  Add onions and cook until softened.  Add wine and cook for 1 minute.  Add tomatoes and season with salt and pepper to taste.  Simmer sauce on low 15 minutes until liquid is absorbed, stirring frequently.

Step 3. 

In a large bowl, combine pasta with tomato sauce. Add bacon, basil and spinach and toss.  Drizzle with Basil olive oil and garnish with grated cheese.
