Broccoli Cheddar Soup

  • 4 tablespoons Fustini's Herbs de Provence olive oil
  • 1 large carrot, cut into matchsticks
  • 2 small garlic cloves, minced
  • 3/4 teaspoon smoked paprika
  • 3/4 teaspoon ground mustard
  • 3/4 teaspoon onion powder
  • pinch cayenne pepper
  • Kosher salt and fresh ground black pepper to taste
  • 4 cups chicken or vegetable stock
  • 6 cups broccoli florets
  • 6 oz cream cheese
  • 4 cups freshly grated sharp cheddar cheese


Add some more heat with Fustini's Chipotle olive oil. Even though there is 1 carrot in the recipe, it is for 6 servings which will reduce the carb count. Adapted from delish.com


Step 1. 

In a medium saucepan, add olive oil, carrot and garlic.  Cook, stirring until fragrant about 2 minutes.  Stir in paprika, ground mustard, onion powder and cayenne.  Pour in chicken stock and bring to a boil.  Season with salt and pepper.

Step 2. 

Add broccoli and simmer until tender about 3-5 minutes.  Add cream cheese, cheddar cheese and cook, stirring until melted.  Season with additional salt and pepper and serve warm.
