Bunless Burger Bites

Gluten Free


  • 1 lb. ground beef
  • 1/2 cup Japanese panko
  • 1 large egg
  • 2 garlic cloves, minced
  • 1 tablespoon yellow mustard
  • 1 tablespoon Black Sheep Worcestershire sauce
  • Kosher salt and freshly ground black pepper to taste
  • 1 tablespoon Fustini's Garlic olive oil
  • 5 slices of cheddar cheese, quartered
  • 6 leaves of lettuce, torn into large pieces
  • 1 cup small jar of dill pickle chips
  • 1-pint of cherry tomatoes


Step 1. 

In a large bowl, combine ground beef, panko, egg, garlic, Worcestershire, and mustard and season with salt and pepper. Mix until fully combined, then form into small, meatball-size patties.  In a large skillet over medium heat, heat oil. Cook patties until your desired doneness, 6 to 8 minutes per side for medium.

Step 2. 

Top each with a cheese square and cover with a lid to let melt, for 2 minutes.  Thread a patty, lettuce, pickle, and tomato on each appetizer skewer and serve.
