Caper Gremolata

Homemade gremolata sauce is delicious as a finish on slow-cooked meats, grilled or roasted vegetables.


Step 1. 

Preheat oven to 375 degrees. Place garlic bulb on a sheet pan and drizzle with olive oil and season with salt and pepper.  Place garlic in prepared oven for 20-30 minutes or until golden brown and soft.  Let cool, cut in half crosswise and squeeze out the soft roasted garlic meat.

Step 2. 

Place half of the roasted garlic meat, capers, lemon and parsley on a cutting board.  Drizzle with Sicilian Lemon balsamic and Gremolata olve oil. Toss and chop finely until paste forms.  Transfer to a bowl and drizzle with more Gremolata olive oil if needed.
