Carol Carr's Cookies

  • 6 tablespoons butter, soft
  • 1 1/4 cup light brown sugar
  • 2 tablespoons milk
  • 1 teaspoon Fustini’s Butter olive oil
  • 1 teaspoon vanilla extract
  • 1 egg
  • 1 3/4 cups flour
  • 1 teaspoon salt
  • 3/4 teaspoon baking soda
  • 1 cup semi-sweet chocolate chips
  • 1 cup pecans, toasted and chopped


Step 1. 

Preheat oven to 375 degrees. Cream together butter and brown sugar. Add milk, Fustini’s Butter olive oil, vanilla extract and egg and mix well to incorporate. In a separate bowl, whisk together flour, salt and baking soda. Add to wet ingredients and mix only until the dough comes together. Add chocolate chips and pecans and stir to combine. Place a dollop of dough on a parchment-lined sheet tray 3 inches apart and bake in the hot oven until puffed and browned - 8 to 10 minutes. Let cool before serving.
