Catalan Grilled Vegetable Salad

  • zucchini, thick slice
  • bell pepper, halved and cored
  • 3 ripe tomatoes, wedges
  • red onion, wedges
  • eggplant, peeled, sliced, salted, washed, dried
  •  Fustini's Medium SELECT olive oil
  • Salt and freshly ground black pepper
Catalan Dressing


Step 1. 

Prepare a hot grill. Place all vegetables on dry grill and cook over direct heat until lightly charred. Carefully turn over and char briefly on the other side. Place vegetables into a bowl and drizzle with olive oil then season with salt and pepper. Serve hot with dressing drizzled over top.

Step 2.  Catalan Dressing

Whisk or shake to emulsify and use immediately.
