Prepare a hot grill. Place all vegetables on dry grill and cook over direct heat until lightly charred. Carefully turn over and char briefly on the other side. Place vegetables into a bowl and drizzle with olive oil then season with salt and pepper. Serve hot with dressing drizzled over top.
Whisk or shake to emulsify and use immediately.
