Sauté cubed ham in 1 tablespoon Basil olive oil or Meyer Lemon olive oil in a frying pan until lightly browned. Cook pasta al dente and drain. Put pasta into a large bowl and drizzle with 2 tablespoons of Basil olive oil. Mix well to coat the pasta. Add ham
Mix 1/4 cup Basil olive oil and 1/4 cup Citrus Oregano balsamic and shake well. Add oil & vinegar to the pasta mixture. Add black pepper to the pasta mixture. Mix all together very well.
Add cashews and cheese. Add more pepper or salt to taste. Cover and let sit in refrigerator for at least 30 minutes to meld flavors (can be made ahead of time - the longer it sits, the better it tastes).
