Cheddar Apple Phyllo Cups

Cheddar Apple Phyllo Cups


  • 2 large tart cooking apples, peeled, cored, and chopped
  • 1/2 cup chopped onion
  • 1/4 cup Fustini's Michigan Apple
  • 1/4 cup brown sugar
  • 1 tablespoon orange peel
  • 1 tablespoon grated fresh ginger
  • 1/2 teaspoon ground cinnamon
  • 1 pk (15 count) phyllo shells
  • 1 1/2 cups shredded cheddar cheese


Step 1. 

In a medium saucepan add chopped apples, onion, vinegar, brown sugar, orange zest, grated ginger and cinnamon.  Stir to combine. Heat on high to bring to a boil. Reduce heat to low and simmer, covered, for about 40 minutes. Remove lid and simmer uncovered to reduce the liquid volume to desired consistency.

Step 2. 

Preheat oven to 350.  Line a baking sheet with parchment paper.  Fill shells with apple mixture and place on prepared baking sheet.  Top with cheese and bake 10-12 minutes until cheese melts.
