Preheat oven to 350 degrees. Slice the package of rolls in half horizontally, keeping them attached as much as possible. Place the bottom half of the rolls on a baking sheet.
In a skillet over medium heat, heat olive oil and add onion. Sauté for 3-5 minutes until translucent and add the balsamic to deglaze and caramelize the onion. Add the ground meat and cook until browned, making sure it is crumbled. Stir in ketchup, mustard and relish until well combined.
Place the sliced cheese on the bottom layer of the rolls. Top with the meat mixture and brush with the Mustard Aioli. Spread the grated cheddar cheese over the meat and top with the top half of the buns. Brush tops lightly with olive oil and sprinkle with sesame seeds.
Bake in the oven for 10-15 minutes until the cheese is melted. Serve immediately with more Mustard Aioli and your favorite condiments.
