Cherry Pear Salad with Goat Cheese

  • spring mix or preferred green
  • 1/2 cup dried cherries
  • 2 pears, washed, cored and sliced
  • goat cheese, large crumbles
  • croutons
Cherry Vinaigrette

 1/2 cup Fustini’s Single Varietal olive oil
• 1/3 cup Fustini’s Traverse City Cherry balsamic vinegar
• 1 tablespoon Wholegrain mustard
• salt and pepper


Step 1. 

In a large salad bowl, add dried cherries and pear slices. Add just enough Cherry Vinaigrette to coat pears and cherries. Toss in enough spring mix so that the greens have a light dressing coating.

Step 2.  Cherry Vinaigrette

Prepare by combining all ingredients except oil. Continue whisking vinegar while adding oil at a slow drizzle.
