A delicious way to use up grilled chicken breast. adapted from delish.com
In a large sauté pan, heat olive oil over medium-high heat, add chicken and chives. Cook 6 minutes on one side, turn over and finish cooking on the other side until internal temperature reaches 165 degrees. Remove from heat and let rest 10 minutes, then slice into 1" pieces.
In a large bowl, combine chicken, apple, onion, and celery. In a medium bowl, whisk together mayonnaise, Dijon, and vinegar and season with salt and pepper. Pour dressing over chicken mixture and toss. Garnish with more chopped chive and serve on a baguette with lettuce.
