In a large pot heat olive oil over medium heat. Add onion and season with salt and pepper. Cook stirring often until softened, 4-5 minutes. Add chicken, garlic and 1/2 tablespoon of seasoning. Cook, breaking up meat into pieces, until browned and cooked through, 4-5 minutes.
Add diced tomato and tomato paste to the pot with the sausage mixture. Cook, stirring until diced tomato is slightly broken down 2-3 minutes. Stir in 2 1/2 - 3 cups of chicken stock.
Bring soup to a boil and stir in couscous. Cook, stirring often until couscous is al dente, 8-10 minutes. Add more stock if the soup seems too thick. Season to taste with salt and pepper. Serve soup with a garnish of parmesan cheese and fresh herbs.
