Preheat oven to 350 degrees. Spread oats on a baking sheet and toast for 10 minutes. Remove pan from oven & turn off oven.
Meanwhile in a medium bowl, mix flour, baking soda, salt and set aside. In a large bowl, beat together Fustini's Butter Extra Virgin Olive Oil, butter and sugars. Add egg and egg white, beating until combined. Fold in oats, flour mixture and chocolate chips. Cover and refrigerate dough for 1 hour.
Preheat oven to 350. Place round teaspoons of dough 2 inches apart onto parchment lined baking sheet. Bake 10 to 12 minutes until cookies are set and golden brown. Cool 5 minutes on sheet. Transfer to wire rack to cool completely.
