In a small saucepan combine all ingredients except for vinegar and mint and stir. Place on medium heat and mix until the mixture has been brought up to a boil. Once boiling, reduce to lowest setting, cover, and cook until liquid has been absorbed, about 15 minutes. Remove mixture from heat and stir in Fustini’s Coconut Vinegar. Place rice in cooler until completely cold. Fold in mint leaves and mold into the desired shape. Serve and enjoy.
