Cod Hush Puppies

  • 4 oz cod, cooked, chilled, flaked
  • 1 C cornmeal
  • 1/2 C all purpose flour
  • 1 Tbsp    sugar, granulated
  • 2 tsp baking powder
  • 3/4 tsp kosher salt
  • 1/4 tsp cayenne pepper, ground
  • 1/4 C onion, minced finely
  • 1/2 C buttermilk
  • 1 Tbsp Fustini’s Butter olive oil
  • 1 tsp hot sauce
  • 2 Tbsp scallions, minced
  • As needed frying oil
  • As needed Bitterman’s Smoked Alderwood salt


Step 1. 

Preheat frying oil to 350 degrees F. In a small bowl, combine all remaining ingredients, except for cod, and mix until just combined. Add cod and fold in gently until just combined.

Step 2. 

Divide mixture into small 1 inch balls and place into frying oil. Fry for about 2-3 minutes. Turn mixture over half way using a spoon and cook until cooked thoroughly. Remove hush puppies from oil and place onto a plate with a paper towel and season with smoked salt.
