Dijon Grilled Pork Chops

Ingredients

Peach, Tomato, Corn Salad

Directions

Step 1. 

Place pork chops in a shallow glass baking dish.  In a small bowl, whisk together mustard, wine vinegar, honey and olive oil.  Pour mixture over pork, turning to coat and let sit 10 minutes.


Step 2. 

Preheat the grill to medium high.  Remove the pork chops from the marinade and season with salt and pepper.  Grill 4-5 minutes per side until internal temperature reaches 145 degrees F.  Remove from heat and allow to rest for 5 minutes.  

Serve pork chops with peach-tomato salad.


Step 3.  Peach, Tomato, Corn Salad

Place the tomatoes, peaches, corn and basil in a large bowl.  In a small bowl, whisk together the garlic, vinegar, olive oil, salt and pepper.  Drizzle over tomatoes and toss to coat.
