Edamame Corn and Blueberry Salad

Ingredients

  • 1  15 ounces can of corn, or 2 cups cooked fresh corn cut from the cob
  • 1 cup fresh blueberries
  • 2 cups of shelled edamame
  • 1 cucumber sliced and then cut slices in half
  • ¼ cup finely chopped red onion
  • ¼ cup chopped fresh cilantro
  • 1 jalapeno pepper, seeded and finely chopped
Lime Vinaigrette

Directions

Step 1. 

In a serving bowl combine corn, blueberries, edamame, cucumber, onion, cilantro and pepper.  In a separate small bowl, combine dressing ingredients and shake or whisk until well blended. Add dressing to salad and toss. Refrigerate until use, this salad can be made a day ahead
