A stir fry where you can add whatever veggies you have on hand, try adding mushrooms, zucchini or yellow squash. adapted from delish.com
In a large skillet over medium-high, brown ground pork, breaking up with a wooden spoon. Transfer to a plate and set aside. Return pan to medium heat and warm olive oil. Sauté garlic and onion until softened, about 4 minutes, then increase heat to medium-high and stir-fry eggplant, pepper and tomatoes for 2 to 3 minutes.
Meanwhile, in a small bowl combine soy sauce, agrodolce and Sriracha an Sesame oil; add to the skillet with green beans and pork. Sauté until green beans are bright green and meat is warmed through. Top with green onion and serve immediately.
