This salad is even better if you can let it sit for a half hour and it is delicious the next day. You can add some pumpkin seeds, roasted beets, roasted winter squash, diced apple, goat cheese.
In a small bowl, whisk lemon juice and vinegar with the olive oil whisking until a dressing forms, and you like how it tastes. Add salt and freshly ground black pepper to taste. Pour the dressing over the kale, massaging into the kale. Let sit for at least 10 minutes. Then add the avocado, cranberries, quinoa and walnuts. Toss and serve.
