Goat Cheese Mashed Cauliflower

  • 6 cups cauliflower florets
  • 2 garlic cloves, minced
  • 1 cup whole milk
  • 4 oz goat cheese, softened
  • 4 tablespoons minced chive
  • 2 tablespoons Fustini's Medium SELECT olive oil


Step 1. 

Place cauliflower, garlic and milk in a sauce pan.  Cover and simmer over low heat until cauliflower is mashable and tender, for about 10-12 minutes.

Step 2. 

Mash the cauliflower and garlic, and stir in the goat cheese, chives and olive oil. Season to taste with salt and pepper.  Drizzle with olive oil before serving.
