Greek Baked Cod

  • 2 tablespoons Fustinis Delicate SELECT olive oil
  • 1/2 onion, small dice
  • 1/2 green pepper, pith removed and fine diced
  • 2 tablespoons black olives
  • 2 garlic cloves, minced
  • 3 Roma tomatoes, peeled, seeded and chopped
  • 1 tablespoon Fustinis Citrus Oregano balsamic
  • 1/4 cup seafood stock
  • 2-3 tablespoons white wine
  • 1 bay leaf
  • 6 cod fillets, boneless, skinless, 6 ounces each
  • salt and pepper
  • 6+ ounces feta cheese
  • chopped parsley


Step 1. 

Preheat oven to 350 degrees.  Place Fustinis olive oil in a medium-size pot over medium heat and add onion.  Saute onion until soft,  stirring frequently for 5 minutes.  Add green pepper, black olives, garlic, tomatoes, Fustinis Citrus Oregano balsamic, seafood stock, wine and bay leaf and bring to a simmer.  Simmer until all liquid is gone, 10 minutes. 

Step 2. 

Season cod with salt and pepper and spread mixture over the top.  Place cod on a rack over sheet pan then sprinkle with the feta cheese and place into the hot oven.  Cook for 10 minutes per inch of thickness, remove from oven and garnish with fresh chopped parsley.
